Ingredients

1/2 Kg.
fish fillets
1
large aubergine (or squash), peeled and cubed
Fresh tomatoes, diced; or a can of whole tomatoes
1
onion, sliced.
1 cup
of water
2
African or Jamaican chillies.

How to prepare Stewed fish with aubergines

Step 1

Cook the aubergines, onion, tomatoes and spices with a tbsp of JUMBO Aroma in a large pan. When thoroughly cooked, mash with a fork to obtain a sauce and remove from the pan.

Step 2

Heat the oil in the pan and add half the vegetable mash. Place the fish on top, and cover with the other half of the vegetables. Cook until the fish is done. Serve with Kwanga or Fufu and Pili-Pili sauce.
