Ingredients

700g
lamb chops
1 cup
of olive oil
1 tbsp.
cumin powder
1 tbsp.
ground coriander
1
onion, grated
4 cloves
of chopped garlic
½ tsp.
black pepper
½ tsp.
cayenne pepper
Rice side dish:
200 g
long grain rice
900ml
coconut milk
½ cup
granulated sugar

How to prepare African style lamb chops

Step 1

Remove any excess fat from the chops and place them in an oven dish.

Step 2

Mix the oil and the rest of the ingredients together, pour over the top of the chops and refrigerate for three hours. Roast on a medium heat and serve with rice.

Step 3

Bring the milk to the boil and add rice, sugar and JUMBO stock cube. Cover and cook on a low heat until the liquid is absorbed.
