Ingredients
- 500 g of rice
- 500 g of fish
- 100 g of dry fish
- 1 green cabbage
- 1 carrot
- 1 cassava
- 1 onion
- 1 aubergine
- 1 lemon
- 1/4 dl of oil
- 1 400 g tin of Jumbo Concentrated Tomato
- 100 g of salt
- 1/4 clove of garlic
- Chilli or pepper
Preparation
Crush the clove of garlic with half a packet of parsley, salt, pepper (grain or powdered) and a little bit of dry pepper.
Clean the fish, cut it into 3 or 4 pieces and put the stuffing in it.
Heat the oil in a pan, add the onion, salt, and tomato diluted in a little water, and 2 minutes later add the fish and simmer for 5 minutes.
Add a litre and a half of water and the pealed vegetables, simmer for an hour, and once the vegetables have been cooked, remove them along with the fish and a little sauce. Add the clean rice to the liquid that is left, cover it and simmer for 15 minutes.
Serve the rice on a hot plate, accompanied by the vegetables and the fish.
